Vegan Albondigas with Noodle Bowl

Packaged foods aren’t my thing but sometimes a convenient reality.
Albondigas are traditionally Spanish meatballs that can be served in soup or sauce. The health benefits of vegan meatballs is no cholesterol, and in general less calories/fat, not to mention vegan is always the compassionate choice!
This is a fusion of a tortilla soup like base with some vegan meatballs in an Italian wedding soup way (brothy meatball soup with veggies). I used Trader Joes Vegan Meatballs and for the noodles I used Annie Chun’s Pad Thai Brown Rice Noodles.
You can get there in less than 40 minutes and delicious.
This soup does not require the noodles but it made a solid one bowl dish.
Please read entire recipe through before starting.
Boil the pot of water, 4-8 cups, for the noodles. Add salt to the water.
Organic Soup Ingredients
Chopped and organic if possible as always:
8 tomatoes
2 onions
8 garlic cloves, varying sizes, pressed
2 teaspoons good salt
1 teaspoon ground cumin
4-8 cups of filtered water
Combine organic soup ingredients in a different pot and let it boil.

Meanwhile chop a bunch of organic cilantro and set aside.

When the soup boils add the frozen vegan meatballs (entire bag), let them boil then when they are hot inside, turn down flame to warm/low.

When the noodle water boils, add Annie Chun’s Pad Thai Brown Rice Noodles (entire bag) for 3 minutes.
Be ready to rinse the noodles in cold water and serve in bowls.
Top the noodles in each bowl with the soup and meatballs.
Garnish with cilantro to taste. I used tons because I love tons of greens.
Options: To make this taste more Thai, serve with lime quarters and hot sriracha sauce.
To make this taste more Mexican, serve with salsa or hot sauce.
If you’re trying to lose weight, use zoodles and/or omit the noodles and add more veggies.
Serves 2-4 depending on how hungry you are!
