Vegan Hot Diggity Cornbread – One Run to Trader Joe’s series
Vegan HotDiggity Cornbread
This cornbread is a One Run to Trader Joe’s (the store) recipe. Make the run, make the food, be happy and done!
In the USA, some cities have Trader Joe’s. You can still enjoy this recipe by locating the ingredients at a healthy or bio store near you.
Please read the entire recipe first and remember, use organic food ingredients when you can!
I don’t generally bake, but after you read this, I hope the WORLD OF POSSIBILITIES opens to you.
One store, one bowl, one pan….done!
You can add so many different veggies or peppers or herbs to this recipe.

I purchased ALL the ingredients in this recipe at Trader Joe’s (well not the Pyrex, but all the foodie stuffs!)
and YAAAASSS, I added vegan hot dogs to cornbread! How fun is that?
Preheat oven to 350F
1 package Lightlife Smart Dogs (vegan hot dogs), cut up
1 package Trader Joe’s Cornbread mix (ignore their instructions–the original recipe called for egg, oil and milk and NONE of that is necessary!)
½ cup Westsoy unsweetened soy milk (or any other plant mylk)
Liquid from one 15 ounce can of garbanzo beans (save beans for hummus tomorrow)
15 oz can of corn, drained
3.8 oz (small) can sliced black olives
4 ounce can of green chilis (not jalapenos, not hot, just green. If you want hot, use jalapenos)
Combine all with a spoon in a bowl
Spray 10×13 pyrex with coconut oil spray
Transfer batter and veggies from bowl into pyrex
Bake in Preheated oven to 350 for 35 minutes in coconut oil sprayed 10×13 pyrex (or until done to your liking)
Serve with a can of beans (Trader Joe’s has canned pinto or black beans and they sell black beans that you can cook) or you can make this recipe with pinto or black beans before you make the cornbread http://www.engineeringwellness.com/delicious-pinto-beans/
The additions above made a sweet bread so you can pair this with baked beans too, but then I’d add more savory veggies/herbs to the bread for balance.

Notes: Note that this batch came out sweet (which is fine and it was well received!) My next batch I will double (yep I said double) the Lightlife Smart Dogs, and not add corn, but add more peppers and perhaps some herbs like sage or rosemary.
