Who wants the fiesta to end?

Let’s create a giant bowl of taco fiesta fun fun fun!

Let’s make a One Run to Trader Joe’s ginormous Taco Salad Fiesta Trough!

This Taco Salad Trough is a One Run to Trader Joe’s (the store) recipe.  Make the run, make the food, be happy and done!

In the USA, some cities have Trader Joe’s.  You can still enjoy this recipe by locating the ingredients at a healthy or bio store near you.

Please read the entire recipe first and remember, use organic food ingredients when you can!

First we need the ingredients for this recipe:

Quick and Dirty Taco Cauliflower Rice by Michele the Trainer

Michele the Trainer’s Taco Salad Fiesta Trough Trader Joe’s Shopping List:

For the Quick and Dirty Taco Cauliflower Rice recipe:

1 packet Trader Joe’s Taco Seasoning

2 packages frozen (or not frozen) cauliflower rice

1 package frozen peas

1 package frozen corn

Small can sliced black olives (drained and rinsed)

Jar of salsa (I love Trader Joe’s Hatch <green> or Roasted <red> salsa)

1 Can (or more if you want) of black or pinto beans, refried or not, or you can use this recipe to make beans ahead of time http://www.engineeringwellness.com/delicious-pinto-beans/ (While homemade Pinto are my favorite for this salad, currently Trader Joe’s does not sell uncooked Pinto Beans, but they DO sell uncooked Black Beans and you can use this same recipe!)

Iceberg lettuce (sliced or shredded–Mexican food is where I declare my love for Iceberg. While other lettuce has more nutrients, it also may taste bitter, so you can use Romaine, etc. but Iceberg with Mexican food is my traditional flavor preference)

Limes (quartered)

Optional: Onions (spring or white) and Cilantro (chop them small and combine, then set aside)

Optional:  AVOCADO or Guacamole!

 

Assembling your Taco Salad Fiesta Trough:

No Taco Arranging Rules (yay!) really, but here’s my approach:

Get your sombrero on and slice or shred the iceberg and arrange in giant bowls.

Heat your beans and Quick and Dirty Taco Cauliflower Rice

Add the heated beans on top of the lettuce

Add the Quick and Dirty Taco Cauliflower Rice on top of that

Add some spoons of salsa to your salad

Serve with quartered lime on the side

Optional garnish with onions and cilantro

Optional avocado or guacamole on TOP!

Imagine eating this salad on a playa hermosa!
