Summer Breakfast for Dinner—Pancakes and Ice Cream with Strawberries -VEGAN!
It all started with the strawberries….
This is a cheat-y assembly recipe. Please read the entire thing through before shopping. Use organic ingredients whenever possible and raw vegan options make everything (like ice cream) taste even better!
This is something I used to do as a non-vegan kid, and I have been wanting to assemble this for years…finally the planets aligned with strawberry season, and wanted to share it with you.
This was a big splurge for me!
Remember, a vegan dessert or splurge is a higher choice on so many levels than a non vegan splurge:
No suffering, no animal fat, likely no cholesterol, no slaughterhouses, no slaughterhouse workers, no factory farms, likely no or less allergens (even the pancakes were gluten free AND vegan), and hey, I used lots of strawberries so it’s like a salad !!! 😉
Shopping? You will need strawberries, pancake mix, plant milk, coco oil spray, vegan ice cream, and coco whip….Please continue reading my loving breakfast-for-dinner-shortcakes!
Here’s the scoop:
- I bought organic strawberries, washed and cut them up. That’s how this story started.
- Pancakes:
Get your blender and thin spatula ready! I had a lot of pancake choices, including making my own righteous ones from oats & bananas of course, but I used Cherrybrook Kitchen Gluten Free Pancake and Waffle Mix (available on Amazon). Note, I did NOT add oil per their instructions, but I did spray my pan lightly with coco oil spray (from Trader Joe’s). The batter was perfection without the oil. I mixed the plant milk (I used organic Westsoy from Trader Joe’s–the pancake box calls for rice milk, so you can likely use any handy plant milk) and mixed it in my blender, then waited 10 minutes for it to thicken. These pancakes came out great!
- You can use any vegan vanilla ice cream…I used So Delicious, coconut based one. <<Btw, one really great vegan ice cream is Van Leeuwen’s vegan flavors if you can find them…cashew based & crazy good.>> I suppose you could use a different flavor too (their chocolate ice cream is DELICIOUS), let me know your creative ideas!
- Fun addition–I wanted coco whipped cream, but ended up with Soyatoo Rice Whip (in a tall can). Personally, I think the So Delicious Coco Whip (in a tub), or other brands of coco whip like Gay Lea (also in a tall can like Soyatoo), are more tasty. You can go full chef mode and make your own organic coco whip too from full fat coconut milk, but hey that takes longer.
I kept it simple (and it was amazing), but your options are unlimited. You can embellish with powdered sugar, coconut sugar, maple syrup, dark chocolate chips, peaches, raspberries, nuts, nut butters, coconut flakes, cacao nibs, vegan sprinkles…you can even find vegan edible glitter if you look hard enough (ummm yep!)…go crazy!

Make all your pancakes and then serve this up like a buffet.
This was super fun to put together and eat. Everyone involved did their own thing, either piling on the pancakes or using the pancakes like a wrap or making a ice cream pancake sandwich.
Sometimes you just gotta do what you gotta do. Refreshing summer brekky for dinner fun!
Why DIY? Sure, I could have used a vegan crepe from numerous places, or had a vegan restaurant assemble this for me, but the ice cream and the pancakes would have been loaded with extra unnecessary fats. I was able to choose the vanilla ice cream with the least fat, the best pancake mix, omit the oil, etc. It was a better way.
