Miso Happy – Michele the Trainer’s Apple Cider Miso Salad Dressing
I took a big double swig of really good quality apple cider vinegar from the bottle, 2 big gulps, and then drove off to work the other day. UGH! Yes it ruined my entire day. What the heck was I thinking? HARSH! BLECK!
Years ago I read and knew all the health benefits of apple cider vinegar, but I’ve personally never loved it. I know I know, some people like it. I do LOVE it in my Gazpacho Recipe, but there it’s only a dash–it really is a key ingredient in that recipe. Recently after reading updated information about the health and alkalizing benefits, etc., I decided to try ac vinegar again. Apparently it had been enough years that I forgot my personal loathing history with said vinegar. Here’s a good FAQ that includes some of the benefits: http://bragg.com/products/bragg-organic-apple-cider-vinegar-FAQ.html

Miso Happy! – Michele the Trainer’s Apple Cider Miso Salad Dressing
- 1 cup Braggs Apple Cider Vinegar (or a good one that includes the mother)
- 3/4 cup Organic Miso (I used red, any organic miso will do*)
- Organic Maple Syrup to taste
- Blend and Store or Serve!
The quality of the maple syrup is key here. Make sure you get the best maple you can find!
*If you are gluten free make sure the miso comes from beans (adzuki or garbanzo) or gluten free grains such as Rice, buckwheat or millet.
My salads have had organic: carrots, persian cucumbers, spring mix, heirloom tomatoes and more.
Go crazy and use this as a grilling marinade!
