Leeky Cabbage Skillet

This is an ALMOST One-Run-To-Trader Joes recipe.  The only weirdo ingredient you need is caraway seeds.

This is a delicious side or main.  It’s warm and full of color, flavor and healthy fiber.

I was going to do this as a blended soup, but then decided on an oil free saute.  It’s more of a steam+stir.

I used an 11 cup food processor with the thin slice blade to slice:

2 white onions

3 leeks

1 package dill (from TJs, about 4 stems and I removed the large stems first)

1 inner package cheaty pre-peeled garlic cloves (Trader Joes) or 10-20 cloves of varied sizes (start with 10)

Put this all aside.

Into a very large high sided pan with a lid:

4 bags shredded Cabbage (Trader Joes, green, purple and orange carrot) rinsed

3-4 tbsp caraway seeds

Turn on low-medium heat covered,  and steam and stir uncovered (I alternate every 2 minutes) until the cabbage cooks down and that will create more space in the pan.  Little by little fold in all ingredients and all the veg is done to your liking.  Make sure all the garlic and dill make it in

Because it’s partially steamed, the water from rinsing the vegetables and the cabbage itself created enough liquid that I never needed to add any liquid.  If you need liquid you can add a bit of water or veggie broth.
