Fat-Free Maple Balsamic Shredded Brussels Sprouts— One Run to Trader Joe’s Series

Soooo, I wanted to try a different BS recipe, but I didn’t want oil, or an overwhelming taste of vinegar or mustard.  I also didn’t want too much sweet (though of course with good maple syrup we all know it’s tough to measure.)

Walla! This was so easy and so goooood and flavorful with no over-powering notes!  This dish also boasts a great texture without any tough leaves.

I threw this together and was eating in like 10 minutes…boom!  Once you have the ingredients and the formula, there will be no stopping you!

In the USA, some cities have Trader Joe’s.  You can still enjoy this recipe by locating the ingredients at a healthy or bio store near you.

Please read the entire recipe first and remember, use organic food ingredients when you can!

Shopping list:

2 bags shredded Brussels Sprouts (produce section–we can always shred our own if you can’t find them shredded)  Each bag is 10 ounces.

Purple Onion

Pre-peeled garlic (produce section)

Balsamic Vinegar

Dijon Mustard (jar)

Maple Syrup

Salt and Black Pepper

Cut onion into small saute suitable pieces…keep them smallish so they cook

Rinse your garlics (keep them separate so you can blend them)

Then rinse your BS and your cut onion in a colander

Into the blender blend:

1 Tbsp sea salt (or salt later to taste)

1 inner bag Garlic cloves (~10 of varying sizes)

¼ cup Balsamic Vinegar

1 heaping tbsp. Dijon Mustard

2 tbsp. Maple syrup

Combine all into a large saute pan with high sides that you have a lid for.

Combine and saute while stirring for 2-3 minutes, then steam with the lid on the pan for 2 minutes at a time, a couple times, stirring between steamy intervals.   Don’t run away…it’s done soon, when the BS and the onion are wilted to your liking.

Add black pepper before serving.

OPTION:  You can likely add ONE MORE VEGGIE of your choice like some shredded carrots or a bit of small cut zucchini, but I’d make this “as is” first, so you can decide for yourself.
