Cornholio Sauce
Cornholio Sauce with Spike

They say, it’s not easy being cheesy.
Cornholio Sauce is inspired by Brand New Vegan Chuck Underwood’s Corn Butter
BNV’s sauce is brilliantly fat free and is more buttery smooth.
With Cornholio sauce, you all know I love pesto, so I heavy pedaled the garlic and NOOCH (vegan nickname for Nutritional Yeast, that makes everything taste super cheesy), use only frozen corn (more fiber so more texture) and use Spike seasoning salt so that it tastes more like super cheesy garlic-y pesto schmear.
- Sometimes I have to just throw everything in, because most of my work is mobile.
- I required a massive increase in garlic for the burn. If you love THAT amount of garlic, then you too will align with the great Cornholio!
- I also wanted a thicker sauce, like a nut free pesto since that’s my favorite consistency.
- Also nooch. If you nooch you’ll understand. It’s loaded with B vitamins (I use Bragg brand Nutritional Yeast)
After I make it, then what?
- If you love garlic bread or miss garlic and butter on potatoes, try this out.
- Use as anywhere you’d use pesto, but this is fat free and ok for those with nut allergies.
- Use as a dip or spread or salad dressing.
- I used it with steamed broccoli, squash and asparagus and it’s mighty nice.
- I use it with zoodles as the sauce.
- I mix it with unfrozen cauliflower rice to make a quick cold salad that (mimics the look of egg salad) you can add other options too like Dijon or turmeric and/or chopped spring onions/olives/pickles/celery and then scoop up with rice crackers or lettuce leaves. I’m eating this now!
- You can mix it all! Mix Cornholio sauce with my other pesto recipes like Eggplant
- You can add herbs into the mix like parsley or basil
- Add more nooch after serving if you want!
Into blender:
1 bag (or half bag) of heated frozen Corn (yes you can use canned corn too OR 1 can Corn drained)
10 cloves peeled Garlic cloves, rinsed
2 tbsp. Spike (season salt that is MSG free)
Juice of half Lemon
1/3 cup Nooch (Braggs Nutritional Yeast), or as much as you can use and have it still blend!
Blend with a bit of water if liquid is needed to blend or if you want it to be thinner.
The benefits are many. Fat free, vegan, flavor bang, adaptable, freezable, portable. Save the planet, lose weight, reap the benefits of plant foods and enjoy delicious food.
