Cuban Loaded Cornbread_Vegan*!
Sometimes you just gotta have some fun. I would never make this regularly, but here and there or for a holiday, or weekend picnic, here you go.
This is ALMOST 100% Trader Joe’s Recipe. If you do not have a store like Trader Joe’s, you can figure this out with ingredients from an Aldi or other vegan friendly market.
Please read the entire recipe first and remember, use organic food ingredients when you can! My jalapenos were even organic!
Trader Joe’s Gluten Free Cornbread mix is such a deal. I started this with 2 boxes and yielded 2 pans of bread.
Last time I made this cornbread I added corn and it was good, but this mix is SO sweet (and has corn kernels) so the corn was good, but unnecessary. Here is that recipe, which featured DOGGIES:

(Wow I forgot how cool it was to add the vegan dogs…next time I do this Cuban version, I can add slices of vegan chorizo!)
I wanted to try a black bean chili-like version first, so here we are.
Again, this mix is very sweet and clearly lists SUGAR as the first ingredient, so I packed it so full of savory plant foods, and we all emerge victorious.
DO NOT follow the box directions. They ask for eggs and oil and you do not need either ingredient.
Recipe:
Preheat oven to 350
Combine in a large bowl:
2 Trader Joe’s Cornbread Mix. Disregard Instructions!
2 cans Cuban Black Beans, not drained (Trader Joe’s)
1 bag frozen Bell Peppers (Trader Joe’s)
4 small cans sliced Black Olives, drained (Trader Joe’s)
2 (12 ounce) jars or cans of nacho cut jalapenos drained (I got these elsewhere, not Trader Joe’s!)
1 cup plant milk (I used organic Westsoy unsweetened, Trader Joe’s)
To bake:
I used 2 pans, and sprayed pans lightly with coconut oil spray (Trader Joe’s)
60 minutes or until fork test done (for me, one pan was done at 60 minutes, the other took 10-15 more minutes)
It’s wonderful warm! Top with guacamole and I’ll come and visit you!
*Vegans, please note that the label does state that it the mix came from a kitchen that also had milk and eggs, so you decide. “Made on equipment shared with milk, wheat, eggs and soy.”
