Want to make a simple soup that just gets better every day?

When I first made this, it was more like miso soup brothy.  The next day’s serving the flavors melted into more of broccoli based soup which was awesome (especially since both fat and dairy were avoided.)

Please read the entire recipe first and remember, use organic food ingredients when you can!

Into a pot of filtered water:

2 tbsp organic white Miso

1 bag frozen Broccoli, rinsed (Trader Joes)

1 inner bag of pre-peeled Garlic, rinsed (Trader Joes)

¼ Celery Root, chopped small–

2 Sweet Potatoes diced (1 would have been plenty)—could have used carrots instead

1 Onion diced

2 Zucchini diced

Good salt to taste.  Remember the miso is salty. I used 1 spoon of salt, but I’m a mineral lover.

Serve with sliced Green Onions…

Next time I might add more Brocolli and serve it with Cilantro and some chopped Avocado on top.  Enjoy!
