Michele the Trainer’s Vegan Organic Ensalada de Noche Buena

Welcome friends to Ensalada de Noche Buena, Christmas Eve Salad. This is a very colorful salad that makes a great dish to bring to your holiday event. Colorful and rich in antioxidants.  You will want to shop early for ingredients, but not prep until you’re ready to go (to prevent avocado and banana from browning). It’s really great to listen to Santa la Noche (O Holy Night) in Spanish while you’re preparing this salad!

 Dressing (you can double this…it’s always great to have more dressing!):

½ cup Organic Fresh Squeezed Lime Juice
½ cup Organic Fresh Squeezed Orange Juice
4 tablespoons Organic Red Wine Vinegar
1 teaspoon Celtic Sea Salt, Fine

To Mix:

1 head Organic Romaine lettuce (Red Leaf Lettuce is a nice choice)

Keep enough leaves to line your serving bowl and chop the rest

¼ cup fresh Organic Cilantro, chopped

2 cups Organic (if you can find it Organic) Jicama chopped into cubes

1 cup Organic Pomegranate Seeds
2 Organic Beets, shredded

1 cup fresh Organic (if you can find it Organic) Pineapple cubes

1 cup Organic Raw Pumpkin Seeds

2 Organic Fuji Apples, sliced into wedges
2 Organic Bananas, peeled and sliced into rounds

1-2 Organic Haas avocado cubed

To Arrange:

2 Organic Oranges, peeled and segmented

1 Organic Red Grapefruit, peeled and segmented

Organic chopped peanuts (optional) for garnish

To Prepare:

  • Whisk or blend the dressing ingredients, and set aside
  • Get 2 large bowls, one for mixing and one that you will serve from
  • Wash, dry and line the serving bowl with some of the lettuce leaves
  • In the mixing bowl, gently combine the chopped lettuce, cilantro, jicama, pomegranate seeds, shredded beets, pineapple cubes, pumpkin seeds, apples, bananas and avocado. You can mix with a bit of the dressing (enough to cover the avocado and banana to prevent browning) but let’s keep most of it to serve on the side.
  • Add your mixing bowl salad to the serving bowl (pour in over the lettuce leaves that line the serving bowl)
  • Arrange the oranges and grapefruit over the top of the salad

 

Serve your beautiful salad in the serving bowl, and serve the dressing on the side, or you can dress the rest of the salad before you serve.

Traditionally this is served with chopped peanuts on top, but we’ve added the pumpkin seeds and avocado so it’s your choice.
