Badass Breakfast Potatoes

Breakfast Taco Commandment: Breakfast tacos MUST include potatoes.

We have to build the house before we paint the house, eh?
Similarly, we cannot talk breakfast tacos, until we make our breakfast potatoes.

Please read the entire recipe before you get started and as always, use organic ingredients whenever possible.

Nobody eats brekky pot (breakfast potatoes) because who the heck has time to cook potatoes before we start our day?

BIG SECRET:

Quick breakfast potatoes start on the weekend before. Bake or boil your potatoes the weekend before. Do not overcook them!

Now that we have some cooked potatoes in the refrigerator, let’s get started.

Ingredients:

Chopped or sliced potatoes, precooked. They do NOT have to be perfect like this photo above, but make sure they are somewhat uniform for the sake of even heating
Chopped onion
Chopped chilis not hot, like bell peppers or poblanos/pasilla/anaheims (optional but great with Mexican breakfast potatoes)
Crushed garlic (optional)
1 tomato chopped (optional) or you can use a bit of pico de gallo/tomato salsa here.

Chopped fresh cilantro/coriander (optional but great with Mexican potatoes)
Chopped chilis, hot, like part of 1 jalapeno (optional)
Sliced Spinach leaves (optional)
Chopped fresh parsley (optional for Italian potatoes and good for cilantro haters, I know you’re out there)
*Coconut Oil 1-2 tbsp. (optional, I use a bit of salsa/pico de gallo/veggie broth or water to saute in)
Salt and pepper to taste

Process:

You will have to stir often, so don’t wander away from the stove
Gather and prep all of your veggies
Heat a high sided pan with your broth, water or oil in to start your saute (if you use salsa/pico de gallo or a tomato you will need less oil or broth)
Add your onion and peppers and tomato, and saute until they are done to your liking
Stir stir
Fold in your potatoes last—they ONLY need to be heated
Stir stir
Salt and pepper to taste
Stir stir

When everything is warm you are done. Ole!

Serve with guacamole and/or use inside your breakfast taco or burrito.
